A scenic, steep, and not-all-that-terrifying way up Mt. Adams (4.3 miles one way with 4500 feet of elevation gain). The trailhead is at Appalachia, so you can make a nice loop with Valley Way or any of the other Northern Presidential trails that originate off Route 2. You'll find yourself walking a moderate knife-edge once you're above treeline.
